Quick Bean Dip

Ingredients:
1 cup fat-free, vegetarian refried beans
1/2 to 1 cup salsa (you choose the heat)

Directions:
Serve this dip with baked tortilla chips or use it as a burrito filling. Combine refried beans with salsa. Add more salsa for preferred consistency.
Makes about 2 cups

Per 1/4-cup serving: 63 calories; 4g protein; 12g carbohydrate; 0.2g fat; 4g fiber; 117mg sodium


Incredible Edible Veggie Bowls

Ingredients:
One green, yellow, or red bell pepper, washed
4 skinny celery sticks about 4" long, washed
4 skinny carrots sticks about 4" long, washed and peeled
2 Tablespoons of your favorite low-fat salad dressing

Directions:
Cut the pepper in half (from side to side). Clean out the seeds from the inside. Now you have two pieces. One will be your pepper-shaped bowl. Cut the other half of the pepper into skinny slices. Cut the carrot into skinny sticks about 4" long. Cut celery into skinny sticks so each one is about 4" long. Pour a little salad dressing in the bottom of your pepper bowl. Place celery sticks, carrot sticks, and pepper slices into the pepper bowl.
Makes 1 Serving

Per 1 bowl serving: 106.3 calories; 3g protein; 17.05g carbohydrate; 32.28 kcal fat; 4.38g fiber; 255.40mg sodium
